Every year, the question in the Tryer Lab is the same one: what does fall taste like? Not the cliché — the actual cup you'd want to hold on the first cold-enough morning. For 2026, the answer took us two years, forty-one test batches, and a sensory panel that got very tired of the word "maple."

We started, as we usually do, with a customization. Our order data is the most honest research instrument we have, and last fall a quiet trend showed up: people adding pecan-adjacent flavor combinations to their lattes, then dialing the sweetness down. That's a signal. It said: give us maple, but treat us like adults about it.

The maple problem

Maple is a diva. Real maple syrup is glorious and completely unpredictable in milk — it can turn thin and sour when steamed, and its best aromatics are the first to burn off. Early batches tasted like pancakes, which is not, it turns out, what anyone wants at 7am.

The breakthrough wasn't a better maple. It was a better pecan.

Toasting the pecan flavor gave the syrup a backbone — a warm, roasted floor for the maple to sit on top of. Suddenly the maple read as "cozy" instead of "breakfast." We locked the ratio at batch 37 and spent the last four batches arguing about the drizzle.

Why a drizzle at all

Because the first sip is with your eyes. The maple crème drizzle isn't just flavor — it's the signal that this is the seasonal one, the drink you waited for. It also happens to catch on the foam in a way that makes each sip a little different, which is the kind of small delight we're always chasing.
