Evergreen started in 2009 as a single corner store on Pike Street with a secondhand espresso machine and a chalkboard that our founder, Marcus, drew on himself because he couldn't afford a printed menu. The chalkboard stuck. So did the idea underneath it: that a coffee shop isn't in the coffee business, it's in the belonging business. The coffee is how you pay rent on the belonging.
We grew slowly on purpose. Every store we open has to pass the same test the first one did — could a regular walk in, get called by name, and feel, for ten minutes, like the day had a soft place in it. When we got big enough that the mornings started feeling like a factory, we stopped and rebuilt the whole experience around slowing back down. That's where the handwritten cups came back, and the condiment bar, and the for-here mugs.
